Joyffles Turkey Stuffing

INGREDIENTS

• 12 Apple Cranberry Joyffles, cut into 1" squares and toasted

• 4 cups Gluten-free Bread, cut into 1" squares and toasted

• 2 tbsp Ghee or Butter

• 1 Large Onion, diced

• 2 cups Butternut Squash, peeled and cubed

• 1 cup Celery, diced

• 3 cloves Minced Garlic

• 1 cup Dried Cranberries

• 1 cup Pecans, rough chopped and lightly toasted

• 4 cups (32 oz) Turkey, Chicken, or Vegetable Broth 

• 3 tbsp Apple Cider Vinegar

• 3 Large Eggs, whisked

• 1 1/2 tsp Kosher Salt, divided

• 1 1/2 tsp Freshly Ground Black Pepper, divided

• 2 tbsp Fresh Thyme, chopped

• 1 tbsp Fresh Rosemary, chopped

• 2 tsp Fresh Sage, chopped

• 2 tbsp Fresh Flat-Leaf Parsley, chopped, for garnish


DIRECTIONS

1. Preheat the oven to 300°F. Toast the bread for 35 minutes and the Joyffles for 55-65 minutes.

2. Prep the ingredients and divide the salt and pepper into 1/2 tsp each for the veggies and 1 tsp each for later on.

3. Raise the oven to 350°F. Then, lightly grease a 9x13" baking dish, and pour broth into a saucepan and warm over low heat.

4. Cook the veggies: In a large skillet, melt 2 tbsp of ghee over medium- high heat. Add the onion, celery, and minced garlic and sauté for 5 minutes. Stir in the butternut squash and 1/2 tsp each of salt and pepper and cook for another 5 minutes. Pour in a couple of ladles of broth, reduce heat to medium, and simmer for 5 more minutes.

5. Place cooled bread/Joyfles cubes and cranberries in a bowl, then slowly add broth until it is absorbed into the cubes.

6. Add thyme, rosemary, sage, pecans, veggies, and remaining slat and pepper into the bowl.

7. Mix 3/4 cup additional broth and 3 tbsp apple cider vinegar and add to the bowl. Add more herbs to taste. (The bread should be moist, but still hold its shape.)

8. Whisk the eggs, then fold them into stuffing mixture. Then transfer the mixture into the baking dish and cover tightly with foil sprayed with baking spray. Bake for 30-40 minutes. Remove the foil and bake for another 15 minutes. (If you want to bake some of the stuffing inside your turkey, set aside desired amount before baking.)

9. Garnish with parsley.
