INGREDIENTS
• 3 pkgs Banana Walnut or Banana Chocolate Joyffles, double-toasted and cut into bite-sized pieces (or 3 individual Joyffles of each banana flavor).
• 3 cups Bugles crispy snacks
• 1 ½ cups bite-sized White Cheddar Cheese Crackers (e.g., Cheez-It) (omit if gluten-free; substitute with cheese crisps if needed).
• 1 ½ cups Smoked Almonds
• 1 cup Mini Pretzels
• 1 cup Dried Plantain Chips
• 12 tbsp Unsalted Butter, melted
• 2 tbsp of Honey
• 2 ½ tsp Chipotle Chili Powder
• 1 tsp Smoked Paprika
• ½ tsp Cayenne Pepper
• ½ tsp Garlic Salt
• ½/ tsp Onion Powder
DIRECTIONS
1. Preheat the Oven - Preheat your oven to 325°F (163°C).
2. Mix the Dry Ingredients - In a large mixing bowl, combine the Bugles, Joyffles, white cheddar cheese crackers (or substitute), mini pretzels, smoked almonds, and dried plantain chips.
3. Prepare the Seasoning Butter - In a small saucepan over medium heat, melt the butter. Stir in the honey, chipotle chili powder, cayenne pepper, smoked paprika, garlic salt, and onion powder until fully combined.
4. Coat the Snack Mix - Drizzle the melted butter mixture over the snack mix, tossing gently to ensure even coating.
5. Bake - Spread the mixture in a single layer on one or more rimmed baking sheets lined with parchment paper. Bake in the preheated oven for 20-25 minutes, stirring once or twice to ensure even toasting.
6. Cool and Store - Allow the snack mix to cool completely on the baking sheets. Transfer to an airtight container and store for up to 1 week.
7. Texture variety: Have fun and make this mix your own. Try adding roasted chickpeas or corn nuts for added crunch. You could even add cranberries for a touch of chewiness, or some dark chocolate chips.
